How to freeze the Garlic cloves

The IQF/ frozen garlic clove is one of the deep processing products of garlic. 1, Raw material inspection:

raw material are required firstly with a complete shape, no rotten, no damaged, no diseases or insect pests, no sugar garlic cloves and other defective products or impurities.

2, Cut the head root:

In the before, this step will be done by hands to cut the head root. This will use lots of labour and the effeciency is not high. During this period, some one have invent some machine to cut the root.

3, Split the garlic buble and peel the skin of clove:

Firstly, the garlic buble will be splits by the machine, then peel the skin. Second peeling: for those not peeled garlic cloves from the machine peeling processing, cloves need to be manually peeled to ensure that the garlic skin to clean.

4, Grading:

Garlic cloves sizes are checked out and graded according to customer’s requirements. Inspections: workshop staff inspection, eliminate diseases and insect pests, bad color, damage, dry scar, rotton spots, and other defective products and impurities.

5, Washing:

To wash the garlic cloves with clean water in the long pool, the water should be flowing. Through this way, it can take away the garlic stem or skin or other impurity.

6, To control the micro

Against the difference request from the clients, we usually have two different way to control the micro. The first way is to disinfect the garlic clove; the second way is to blanch the garlic clove. Both way can well control the micro in the garlic cloves.

6.1 Disinfection:

acceptance of qualified garlic clove in 100 mg/liter of sodium hypochlorite OR peracetic acid solution immersion 15 minutes, achieve the surface pathogenic bacteria to kill the purpose. 

Cleaning: Rinse with running water to remove sodium hypochlorite OR peracetic acid residue solution. 

6.2 Blanching:

To blanched the garlic cloves in blanching pool with hot water (around 85-95℃, staying around 30-45 seconds); achieve the surface pathogenic bacteria to kill the purpose. 

Cleaning: to cool down the garlic cloves with icey water, and at the same time to clean again

7, Dehydration:

remove the moisture on the surface of the garlic clove by air drying machine.

8, Individual Quick freezing:

put the qualified garlic clove after the above series of treatment into the net belt type freezer. The temperature in the production time is below -35 to -45℃, and the temperature in the center of the product is below -18℃ after quick-freezing.

9, Metal detection:

all products must pass the metal detector, workshop dedicated personnel to operate, on duty quality control personnel to carry out sensitivity test every hour.

10, Choosing and Packing:

Packing must be carried out in a special clean and sanitary packing room, and the space temperature is required to be controlled within 0~10℃.

11, Refrigeration:

the packaged products should be put into storage in time. In order to ensure the quality of products, the storage temperature should be kept at -20±2℃ and the center temperature of finished products below -18℃.
